Curried Cauliflower Soup

Total time: 30 minutes

Prep time: 10 minutes

Cook time: 20 minutes

Yields: 4 to 6 servings

Ingredients

⅓ cup raw cashews

¾ cup water

2 tsp. extra virgin olive oil

1 medium onion, diced

1 can (14-ounce) light coconut milk

1 large head cauliflower, chopped in small pieces

¼ tsp. ground cinnamon

1 tsp. evaporated cane sugar

1 tsp. ground turmeric

2 tbsp. curry powder

¼ cup chopped cilantro

Caramelized onions

Salt

Directions

Blend the cashews in a blender until finely ground.

Add three-quarters of a cup of water to the cashews and continue blending

for 2 more minutes.

Strain the mixture through a fine mesh strainer into a bowl and set aside.

Add olive oil to a large pot set over low heat.

Sauté onions in the hot olive oil until golden brown.

Add the cashew milk, coconut milk, cauliflower, cinnamon, sugar,

turmeric, curry powder and salt.

Add enough water to cover mixture and bring to a gentle boil.

Lower the heat and simmer for about 10 minutes or until cauliflower is

tender.

Transfer the mixture to an immersion blender and blend to your desired

consistency.

Return to the pot and heat.

Ladle the hot soup into bowls and serve garnished with cilantro and onions.
